Soybeans are commonly made into soymilk, soy flour, tofu and other such foods in cooking. They can not be eaten raw and must be cooked in a 1:3 ratio with water. Soak overnight, then bring water to a simmer, add the beans, cover and simmer for at least three hours. You can season these and add them to your rice and soups.
Soy grits are simply toasted soybeans that have been ground into coarse pieces. They have a pleasant, nutty flavor and are rich in essential amino acids, minerals and vitamins.
