The mung bean is mainly cultivated in Asia and India and is staple of these regions cooked and used in pilaf-like rice dishes. Mung beans can also be sprouted by soaking them in water for four hours in the daylight and then moving them to a cool dark location. Organic mungs can also be sprouted under artificial light for four hours over a week. They are rich in protein and carbohydrates.
