Tapioca has many uses. Tapioca powder and starch can be used to thicken soups and liquids or as a binder. Tapioca starch is best used in baking pies and flat breads such as chips and wafers. If you are looking to make tapioca pudding or thicken pie fillings or gravies – you’ll want to use granulated or small tapioca pearls. Just bear in mind these don’t dissolve completely when cooked so the finished product will have tiny little tapioca balls as part of the finished product.
